Ingredients for 4 servings  

  • 200 grams of peeled large shrimp.
  • 1 lemon
  • 2 avocados
  • 1 handle.
  • 2 tablespoons of lemon juice.
  • 1/2 cup of extra virgin olive oil.
  • 2 cups of lettuce.
  • 1/2 cup of red onion.

How to prepare

  1. Start by opening the lemon in half and cutting into thin slices.
  2. Cut the avocados in two and remove the pit and skin. Cut into cubes and pass the lemon slices through the avocado to prevent them from darkening.
  3. Peel and cut the mango.  
  4. In a small bowl, prepare the vinaigrette for the dressing. Mix the oil with the lemon juice, salt and pepper. Mustard can be added to taste.  
  5. Wash and drain the lettuce leaves well. Peel and cut the red onion into small cubes.  
  6. Put a griddle over medium heat and cook the shrimp for one minute on each side. They have to be pink. Let cool.

What you need to make 4 servings of salad

  • 1 mango and 1 large avocado.  
  • 1/2 purple onion.
  • 4 cups of arugula leaves.
  • 1 tablespoon of lemon juice.

For the dressing:

  • 1 tablespoon of white wine vinegar.  
  • 4 tablespoons of orange juice (more or less the juice of half an orange).
  • 2 tablespoons of lemon juice.
  • 4 tablespoons of extra virgin olive oil.  
  • 2 tablespoons of ground cumin.
  • 1 red chili pepper or 1 sweet pepper if you don’t like spicy.
  • 2 tablespoons of coriander.
  • Salt and pepper.  

Step by Step

  1. Before assembling the dish, peel and cut the mango and avocado into medium slices. Wash and dry the arugula leaves carefully.  
  2. Peel and cut the onion into thin strips and place in a container with water and the lemon juice. Let stand 10 minutes, discard the water and pat dry.
