The empanadas are delicious. Indeed, whatever the secret inside, the truth is that they are one of the favorite snacks in the world. In addition, there are many kinds, with all kinds of fillings, baked or fried.

The main secret is the dough. Thus, they can be prepared with a bread dough or a thinner and crisp puff pastry. It all depends on what we want and what we like the most. The same can be said in relation to the filling.

Now, empanadas usually include ingredients that are incompatible with a vegan diet. For example, before being put in the oven, they are usually covered with beaten egg to obtain better consistency, color and flavor. Therefore, the question arises: is it possible to make a vegan patty?

Vegan empanadas recipe 1 (vegetables)

Homemade vegetable patties

Ingredients

For the mass:

  • A cup of wheat flour
  • 1/3 cup of warm water
  • 3 tablespoons olive oil
  • 1 dessert spoon of baking powder
  • Soy milk for brushing
  • Salt

For the filling:

  • 1/2 cup peas
  • 1 small onion
  • 1/2 red pepper
  • 1 small zucchini
  • 1 clove garlic
  • A little celery
  • 1 teaspoon yeast
  • Salt
  • Pepper

Preparation

  • First, we boil the peas.
  • Meanwhile, add all the ingredients for the dough to a bowl and knead very well. Then, we cover with a kitchen film paper and leave it inside the refrigerator for half an hour.
  • Next, we wash and cut all the vegetables into small pieces (except the peas) and add a good splash of olive oil, salt and pepper.
  • Then, in a pan, sauté all the vegetables, adding the peas until golden brown and the liquids are absorbed.
  • Then we take the dough out of the fridge and divide it into eight parts. We knead each piece and make a very fine circle.
  • Subsequently, we add a tablespoon of the vegetable filling in each circle and close the dough. To do this, we must not overfill the dough and we must close it well, squeezing the edges with a fork. Otherwise they will pop open and the filling will spill all over the place as it bakes.
  • To close them and provide a golden layer on the outside we can brush them with soy milk.
  • Next, place the empanadas on a baking sheet with a little flour on the base to prevent them from sticking.
  • Then, in a preheated oven at 200 ºC, we bake the vegan empanadas for 20 minutes until golden brown.
  • Finally, we can now enjoy our vegan empanadas, both hot and cold.

Vegan empanadas recipe 2 (spinach)

Ingredients

For the mass:

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon of sugar
  • 1/2 cup of vegetable margarine
  • 1 tablespoon apple cider vinegar
  • 1/3 cup of cold water

For the filling:

  • 1 bag of frozen spinach
  • 1/2 onion
  • 1 large garlic clove
  • 2 tablespoons olive oil
  • Salt

Preparation

For the mass:

  • First, we sift the flour and add the salt and sugar.
  • Then, once these powdered ingredients are well mixed, we add the margarine at room temperature and mix it with the flour.
  • Then, we add the vinegar and water little by little, kneading continuously.
  • Finally, we continue kneading the whole mixture until we have a uniform dough.
  • We cover it with kitchen plastic wrap and put it in the refrigerator for an hour.

For the filling:

  • First, we wash and peel the vegetables.
  • Then, we finely chop the onion and garlic and fry them in a pan or pot with the olive oil.
  • Later, we add the spinach to the pan. If they are frozen, we must have thawed them before and washed them very well. In addition, we must drain them so that they do not have excess liquid.
  • Once the spinach is added, we stir everything a little and then cover the pot. Let it cook over low heat for about 5 or 7 minutes. Then, we remove from the fire.

The empanadas:

  • First, we take the dough out of the refrigerator and divide it into how many empanadas we are going to make.
  • Then, we flatten the dough pieces well with a roller, so that they are in the shape of a circle and very thin, and add a tablespoon of filling.
  • Later, we close the empanada well following the same advice as in the previous recipe.
  • Next, place the empanadas on a baking sheet with a little flour on the base to prevent them from sticking.
  • Finally, in an oven preheated to 200 degrees, we bake them for 20 minutes.
