Coquitos Suitable For Celiacs

Prepare these different recipes of coquitos or cocadas and enjoy with all the guests, also celiacs, since they do not contain gluten.

The  coquitos or cocadas are a classic especially in Christmas pastries. It is a traditional dessert and, as it does not have flour, it is  suitable for celiacs. Products for celiacs are usually more expensive than traditional ones, so if you want an inexpensive sweet that all the guests can eat, we offer you here two different coquitos recipes.

Coquitos recipe 1

This recipe is very easy to make and also requires very few ingredients.

Ingredients:

  • 2 large eggs
  • 200g sugar
  • 1 teaspoon of honey
  • 1 tablespoon of creamy butter
  • 200 g of grated coconut (more or less)
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla flavoring (optional)
  • 2 tablespoons of milk
  • 1 tablet of dark chocolate to melt (optional)

Utensils:

  • 1 whisk or a few hand whisk
  • 1 bowl
  • Baking paper
  • 1 fork or spoon
  • Oven

  1. First, put non-stick paper on the baking tray so that your coquitos don’t stick.
  2. Preheat the oven to 180ºC.
  3. Separate the yolk carefully so that no rind or yolk remains in the whites.
  4. Then, beat the whites until stiff. If you want them to mount more easily add a pinch of salt when you start to mount them.
  5. Add the yolk, butter, honey, sugar and grated coconut.
  6. If you find that the mixture does not have a texture to form balls,  add a tablespoon or two of milk.
  7. Then bake for 12-20 minutes, until they turn golden brown.
  8. If you want, you can bathe them with melted chocolate in the microwave. Bathe your coquitos right away, because if you let the chocolate cool, it will get hard.

Coquitos recipe 2

This recipe has more calories from the condensed milk and cornstarch.

Ingredients:

  • 1 large jar of condensed milk (can be low in calories)
  • 500 g of grated coconut
  • 8 egg yolks
  • 4 egg whites
  • 120g sugar
  • 180 g cornstarch
  • 1 teaspoon ground cinnamon

Utensils:

  • 2 bowls
  • A few hand rods or a whisk with rods
  • Silicone spatula
  • Baking paper
  • Oven

  1. Preheat the oven to 180ºC.
  2. Then mount the whites until stiff with the sugar in a bowl.
  3. In turn, in another bowl mix the yolks with the condensed milk.
  4. Next, add the grated coconut and cornstarch to the previous mixture.
  5. Add the whipped whites in 3 times so that they do not lower the volume.
  6. Line your cookie sheet with nonstick paper or use a mini muffin tin.
  7. Put your coquitos with a spoon or with a pastry bag.
  8. Bake for about 30 minutes.

Tips for the presentation of the coquitos

  • The coconut  must be very fresh.
  • You can serve them  as is or battered  with grated coconut, but remember to do so as soon as you remove them from the oven.
  •  Another option is to decorate the coquitos with cherries or jelly.
  •  Put them on an aluminum foil or colored paper cup.
  • If you want to make them more easily and you also like that all the balls come out more or less the same,  you can use a tray for mini muffins with a cup on each base.
  • Another option is  ice cream scoops or scoops.  If the mixture is not too compact,  use a pastry bag.
