Pear sigh recipe

The sigh of pears is a dessert that consists of a very soft and fluffy baked dough. The recipe has been designed based on pears; however, it can be substituted if necessary by apples or other seasonal fruits.

The recipe is a basic formula, quite light, and the pear is laminated on top. Along with the pear, any other fruit that reacts well to the heat of the oven will be equally appropriate.

The recipe serves approximately four people. If you want to increase the quantity, the ingredients must be increased proportionally.

Ingredients

  • 2 large ripe pears
  • 2 eggs (60 g)
  • ½ cup of applesauce (100 g)
  • ½ cup of yogurt (Greek type) (100 g)
  • 2 tablespoons of rice flour (30 g)
  • ½ cup of brown sugar (100 g)
  • 3 tablespoons of ground almonds (45 g)
  • The juice of 1 lemon
  • Ground cinnamon (to taste)
  • 1 pinch of salt

Elaboration

  1. Preheat the oven to 180 ° C.
  2. Grease a medium baking dish or cover with wax paper. If portions are desired, individual molds can be used.
  3. Peel, discard the seeds and cut the pears into thin slices. Reserve in a container and sprinkle with a little lemon so they do not darken.
  4. Separate the yolks and whites from the eggs.
  5. Collect the yogurt, the yolks, the sugar and the applesauce in another container. Mix everything very well until it is mixed evenly.
  6. To the previous mixture, add the ground almonds, the rice flour, the stevia powder and the salt. It should be a homogeneous, smooth and lump-free dough.
  7. Beat the whites with an electric wire mixer until they reach the snow point.
  8. Add it little by little to the mixture with enveloping movements so that the meringue does not fall.
  9. Place the dough in the greased mold and put the pear slices on top, pressing a little to make them embed.
  10. Sprinkle a little icing sugar and cinnamon on top.
  11. Bake for about 40 minutes, or until golden brown or when it feels cooked when you click.
  12. Let cool and serve.

This dessert has few calories, so it is very light while still being delicious. It can be consumed with a hot or cold infusion, without refined sugar.
